Meal Pinning, Monday! #9

Emily at Louisiana Bride hosts Meal pinning Monday each week. Since finding her, a fellow "Graduate wife," who moves a bunch for the sake of her husband, our meals have been very different around here. In such a great way! :) There was a while where things were a little sketchy around our apartment. Moe told me that he could eat Koshary every day and I took this to an entirely horrible extreme. Sorry, Moe. :) But, in my defense, there was a learning curve. Sometimes I just have no idea how to do things here. It's been difficult getting to cook in our new apartment, too. I might not like change the way that a lot of people do. :) I've been able to find a groove, with Meal Pinning Monday. I don't buy it unless it's on our recipe plan, with the exception of a few things (which help with lunch, snacks, etc.) I was just talking with my friend, Kristen, and then Whit about meal planning. I feel lost about how I even planned meals before? I really don't know. I think I did do this to a certain extent, but then Moe and I would end up going out to dinner because one of us was home late, usually me, from work and didn't really feel like cooking/cleaning/doing dishes when I had a huge stack of paperwork going on. But, I no longer have a huge stack of anything, except scrapbook paper, haha.

I've heard complaints about people not being able to find certain ingredients here on the island, and it's true. This does happen, but there's no sense in letting that stop me from being able to enjoy a nice home cooked meal with my husband before he has to get back to studying. Moe and I are clearly not starving, and we're pretty happy with the things we've been eating. Or, I'm pretty happy. I can't quite speak for that guy. 



As a confession- I had this planned out somewhat ahead of time. Here on the island it's important to go to the grocery store on Thursday or Friday, which works out well, I can get the things for half of each week during the weekly grocery trip. But, something I hadn't really considered for this past week was that we needed to have eggs for the sweet and sour chicken, so I made the Dhaba Chicken, Samosa and Gulub Jamun already. I'm not going to "edit" accordingly, either. That sounds like a terrible idea. It's just one little switch. :) Not a big deal. No one even would have known had I not mentioned it now. :) haha.

Monday: I'm not entirely sure that this has a name, I think it says "Mouthwatering Chicken Breasts" on Pinterest, but sometimes I wonder if that really counts. 

Tuesday: Homemade Biscuits and chicken pot pie.



Wednesday: Dhaba Chicken with Samosa and Gulab Jamun for dessert.


Moe and I both love Indian food. We can buy it on campus for relatively inexpensive, about $30.00 E.C. for one plate of food which is about $11.00, which isn't bad, but I should still be able to make it cheaper, and I have this particular Indian Spice that's needed in some other recipe that I made, so I might as well make some other Indian recipes and use up the spice. Also, the Samosas are one of my favorite things. We used to go to the lunch buffet at Rangoli, nearby where we used to live. I think we both loved it. There was another restaurant that we loved even more though. :) It was nearby Ikea, and I cannot spell it. Also, Moe loves Gulab Jamun. I've resisted making these, but since we'll have Indian food, I should just go all out, I think. Why not?!

(this bothers me a little bit) the wrap is pictured here, but in reality that's nothing like the way the chicken really looks, ha. I've made this before, but, it's been some time so I think it's time to bring it back. We'll probably have this with rice instead of the suggested pasta.

 Friday: Chili's Copy Cat Chicken Enchilada Soup


This calls for Velveta, which I will omit, I might exchange with some real cheddar, and I probably won't use the Colby Jack cheese either, because I don't see it often, and we don't eat it often, so this won't exactly be a great choice. I will also probably just make my own enchilada sauce. I have no idea whether we could get the canned version here. I imagine that this might taste a little bit different, but, it should be pretty nice too.

 Saturday: Baked Chicken Flautas with homemade tortillas



Sunday: Stuffed Pizza Rolls, with homemade pizza dough. I'll use just a basic recipe (3.5 cups flour, 1 1/4 cup warm water, 1 Tbsp. Yeast, 1tsp. Salt, and I also add about 1 Tbsp. Sugar to help offset the yeast-y flavor/smell that bugs the crap out of me).


In my quest to finish making all of the recipes I have pinned on pinterest (just kidding, kind of) not feel the need to buy really expensive oreo cookies at the grocery store or really expensive Chips Ahoy cookies, I want to make a cookie/dessert on a pretty regular basis. Last week I made these brownies:


Which were pretty good, but I admit, I think they had too much butter in them. It was kind of bubbling on the top, and I may have over cooked them a bit. Also, they were literally falling apart all the time? I don't know why, it was really weird though. They were good. I added some chocolate chips and walnuts (from home, of course, haha). But, these brownies are still not as amazing as pillsbury milk chocolate brownies which I can get and make from a box. haha. I know, I KNOW. I love to cook, but I don't think baking is a strong suit of mine. I like boxed cake mixes too.

Truthfully, I am working toward changing this, hence the brownie recipe. It's helping in my attempt to finish all of the recipes on pinterest  not purchase store bought cookies (that tend to be pricey and sometimes disappointing because they have been sitting on the shelf for too long) such as oreo cookies or Chip's Ahoy!

This week I'll try these cookies: Chocolate Chip Pudding Cookies.

The pudding probably makes them much moister than homemade chocolate chip cookies generally are. I imagine that this will be helpful. I sometimes don't like chocolate chip cookies that I make from scratch. Since being here I've used the same BEST PEANUT BUTTER CHOCOLATE  CHIP COOKIE recipe. ever. The person who blogged about it confirmed it and so did I. They really are a crowd pleaser, and I personally love them so much, too.

  1. I, too, wish I could finish all my recipes on Pinterest, but I just keep finding more and more that I want to make! Are homemade tortillas hard? We eat them a lot and I would love to know how to make them by hand. In fact, in my mind I would love to make everything by hand, but I'm too lazy. B got me a hand mixer for Christmas {I was mixing everything with what was essentially a paint stick} and now I want to make homemade cake and everything! :) Oh, what is the best cookie recipe!? B loves peanut butter cookies and mine are always awful. I think my pan is too dark or something? The bottoms always burn even when I adjust the temperature accordingly. This is why I'm excited to register for wedding things lol. :D
